Sheet Pan Omelet
Ingredients:
1 tablespoon melted butter
5 to 6 strips of crumbled bacon
1 cup chopped baby spinach
½ cup red bell pepper diced
2 medium green onions chopped
1 to 2 cups of Colby Jack cheese
12 large eggs
½ cup light cream or whole milk
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
A few dashes of hot sauce

Preheat oven to
350˚
2.
Spray 15 x 10 x
1 inch jelly
roll
pan with non stick cooking
spray
and brush with the
melted
butter.
3.
Place bacon,
green onions, bell
peppers
and half the cheese in
the
prepared pan.
4.
In a bowl whisk
together eggs,
cream, salt and pepper, garlic
and
onion powder.
5.
Evenly pour the
egg mixture
over
the toppings in the pan and
sprinkle
with the remaining cheese.
6.
Bake for about
20 minutes.
7.
Check to make
sure the eggs are fully set.
8.
Once cooked cut
the omelet into pieces.
9.
Enjoy as is or
top with sour cream,
green onions or
salsa.
